This elegant spinach salad tastes as great as it looks. The savory nut mixture blends well with the earthy flavor of fresh spinach and sweet red grapes make an attractive garnish. Serve this dish at your next raw dinner party to impress your guests!
750 g spinach leaves
25 g raw nuts of your choice, soaked 8 hours or overnight
Zest of one lemon
50 g raw sunflower seeds
3 cloves garlic
3 tablespoons olive oil
Salt to taste
1 large handful of sprouts
Wash the spinach thoroughly and set aside to drain. Put the soaked raw nuts, lemon zest, sunflower seeds, garlic, oil, salt and figs in a food processor. Process in short bursts until coarsely chopped. Spread the spinach leaves on plates. Scoop the nut mixture into balls and place one in the center of each plate. Sprinkle generously with sprouts and garnish with grapes around the edge. Serve immediately.
