Raw food recipe: Raw Vegan Cilantro Pesto

Cilantro pesto is a versatile sauce with a bright, slightly spicy flavor. Spread it on raw vegan wraps, as a base for raw pizzas, as sauce in veggie “pasta” or as a dressing for salads. You can also add large chunks of chopped onion and celery after processing to make a flavorful variation on salsa.

2 cups fresh cilantro
1/2 cup walnuts
1/2 cup lemon juice
2 teaspoons sea salt
1 cup fresh spinach
3 cloves garlic, grated
1 tablespoon ginger
2 tablespoons chili powder
1 cup olive oil

Pour all ingredients into a food processor and process until smooth.
