Raw Carrot-Ginger Soup Recipe

This pea-soup lookalike is surprisingly flavorful. It has a natural sweetness that makes it one of the more popular raw soups with children if you can convince them to taste it. You can serve this soup chilled, at room temperature or slightly warmed (under 40F/4C). Garnish with carrot curls or scallions.

Ingredients
Juice of 10 to 15 carrots
Juice of 2 green apples
Juice of 1 lemon
3 avocados
½ teaspoon sea salt
1 teaspoon chopped ginger
½ teaspoon allspice
Water

Preparation
Place all ingredients in a blender and blend until creamy and smooth. If the mixture is too thick, add water and blend again until it has a cream-soup consistency.
