Chicory is a slightly bitter, peppery leafy green that adds a unique flavor to any dish. This salad pairs chicory with fruits and agave syrup for a bittersweet taste combination that is sure to please.
5 bunches of chicory
150 g white (seedless) grapes, halved
2 apples, peeled and cubed
1 tablespoon lemon juice
4 tablespoons raw agave syrup
3 dates, chopped
3 tablespoons olive oil
Scant 3 tablespoons chives, chopped finely
Sea salt and ground pepper
Wash chicory bushes, cut off the stumps and separate the leaves. Place the leaves in a colander to drain.
Raw dressing: In a bowl, whisk lemon juice, agave syrup and olive oil to combine. Stir in chives and add salt and pepper to taste.
Arrange the chicory, apples and grapes on a plate and drizzle with dressing.
