Coconut “snowballs” are a favorite treat for children and adults alike. This raw version is richer than the cooked cake version, so just one or two will satisfy your sweet tooth. You can also color the coconut with natural food coloring to make a special holiday treat for kids.
150 g shredded coconut
525 g raw mixed nuts
125 g dates
25 g raisins
4 tablespoons raw agave syrup
Process the mixed nuts in a food processor until finely ground. Add the agave syrup, dates and raisins and process until a sticky dough forms. Form dough into 1 to 2 inch balls and roll in shredded coconut. Refrigerate until chilled and set. Best when served cold.
