Grain-Free Raw Tabouleh Recipe

This variation on tabouleh uses only fresh vegetables and herbs. If you are serving a Mediterranean-style meal to someone on a wheat-free or gluten-free diet, this traditional salad is sure to pleasantly surprise. The trick is the chopped cauliflower, which does a good impression of the cracked bulgar wheat in traditional tabouleh recipes.

1 small head of cauliflower
1 red pepper, coarsely chopped
1 cup fresh peas
2 yellow tomatoes, diced
1/2 small cucumber, diced
1/2 cup fresh mint, chopped
1/2 cup fresh parsley, chopped
Olive oil
Lemon juice

Divide the cauliflower into stumps and chop finely in food processor. Mix in remaining vegetables and serve with a simple dressing of olive oil and lemon juice.
