Pickled beet salad is an old favorite that many of us grew up with. This cool, crisp raw version captures the flavor well. Add a handful of nuts or almond cheese with raw crackers and you have a filling, nutritious meal. Beets are also an excellent source of vitamin C to help build your immune system.
4 small red beets, washed and shredded
4 sweet apples, grated
1 medium onion, finely sliced
1 clove garlic, sliced
2 teaspoons sesame seeds, soaked
1/4 teaspoon of agave nectar
Juice of 1 lemon
Salt and pepper
1 sprig of parsley
3 fresh basil leaves
Mix together beets, apples, onions and garlic, blending well. In a separate bowl, combine agave nectar, lemon and sesame seed; add salt and pepper to taste. Stir dressing into mixed vegetables, making sure to coat everything well. Garnish with parsley and basil leaves.
