Raw food recipe: Colorful Raw Vegetables

Presentation is everything when you’re entertaining, and this colorful vegetable dish is sure to be a crowd pleaser. The avocado dressing for the spinach is especially tasty. If you’d like to form the center vegetables into a ball, chop them extra finely and add a little olive oil to help them stick.

2 cups seaweed
200 grams fresh spinach
Juice of 1 lemon
Dash of salt
Dash of olive oil
1 small head of cauliflower
1/2 head of broccoli
3 red tomatoes
1/2 red pepper
1/2 green pepper
15 pieces of dried tomato
1/2 cup ripe olives
Handful of lightweight sprouts, such as alfalfa, broccoli or lentil

3 yellow tomatoes
1/2 yellow bell pepper

1 bunch parsley
3 cup water
2 ripe avocados
2 teaspoons sea salt
3 teaspoons fresh pepper
Juice of 1 to 2 lemons

Place the seaweed in water to soak. Place the spinach in a shallow bowl. Mix the lemon juice, salt and olive oil and sprinkle over the spinach. Allow to soak while you complete the other preparation. Finely chop the cauliflower, broccoli, fresh and dried tomatoes, red and green peppers, and olives. Coarsely chop the yellow tomatoes and yellow pepper.

Sauce: Put all sauce ingredients in the blender and blend until it is creamy.

To serve: Neatly arrange the chopped vegetables in the middle of the plate. Surround with fresh sprouts. Alternate sections of spinach and seaweed around the outside of the plate. Divide the avocado sauce and drizzle over the spinach sections. Place a line of the chopped yellow tomatoes and yellow peppers as dividers between the sections of spinach and seaweed.
