Raw Spinach Cream Soup recipe

When you chose a raw diet, you may have thought creamy soups were a thing of the past. Not a chance! Soaked raw nuts can be blended to a rich texture that is both tasty and nutritious. Try this flavorful, creamy spinach soup for a hearty meal on a chilly day.

Ingredients:
4 cups fresh spinach
1 cucumber
1 cup unroasted cashews, soaked 8 hours and rinsed
1 cup macadamia nuts, soaked 8 hours and rinsed
3 teaspoons lemon juice
Sea salt to taste
Pinch nutmeg
1 cup water plus extra if needed

Preparation:
Place all ingredients in the blender and blend on medium speed until it is completely smooth and creamy. If it gets too thick, add water by the tablespoon until it is the right consistency.
Serve at room temperature.
