Who doesn’t love apple pie? Kids, friends family; everyone will love this raw spin on the traditional apple pie. It is also easy to make and can be ready quickly for unexpected guests, but if you have time, make it the night before for the best flavor.
Crust for a 26 cm (10 inch) pie plate:
150 grams of walnuts or pecans, soaked for 1 hour
100 grams of almonds, soaked 8 hours or overnight
250 grams raisins
First layer filling:
Juice of 1/2 of a lime or lemon
1 tablespoon of ground coconut (optional)
Second layer filling:
2 large Goudreinet (Golden Reinett) or other soft tart apple, sliced thinly
Juice of half a lime or lemon
Cinnamon to taste
Grated fresh ginger or ginger powder to taste
Grind the nuts in a food processor. Add dates and raisins and process until a dough-like consistency forms. If the dough is too thin, add more ground nuts. If it is too dry, add water or dates to help it stick together. Press the dough into baking pan, spreading evenly.
Mash the bananas. Mix in the juice and coconut. Spread it over the crust.
In a separate bowl, mix the juice, cinnamon and ginger. Add the sliced apples and stir gently to coat. Layer the apple slices on top of the first layer.
