Here are a couple of rich, decadent desserts to try.
Banana Split with Brazil Nut Pralines
10 Brazil nuts
1 apple, sliced
Honey or stevia
Cardamom / cinnamon
Process Brazil nuts in a food processor with S-blade for sprinkles. Mix with honey/stevia, cinnamon and cardamom to taste. Freeze five bananas 12-24 hours. Remove and let sit at room temperature for 15 minutes. Process bananas in a food processor until you have a creamy ice cream. Stir in some of the Brazil nut pralines. Place in a nice bowl, garnish with apple slices, and sprinkle on the rest of Brazil nut pralines.
Cashews Nut Balls
2 cups cashews, soaked overnight
1 1/2 cups raisins, soaked 8 hours
1 1/2 cup dates, soaked 8 hours
1 cup shredded coconut
Place half of the cashews and all of the dates in food processor. Process until it is a thick cream. If it gets too thick, use the soaking water from the dates and raisins to thin. Coarsely chop the remaining cashews. Mix chopped cashews and raisins into the cashew cream. Form into 1-2 inch balls and roll in shredded coconut. Ideal for freezing.Written by Elise Goodlife
