Recipe for Raw Parsnip Couscous

This recipe is for a single serving, making it a good choice for a quick lunch.

1 parsnip
1 pear, coarsely chopped
2 handfuls arugula
1/2 tablespoon olive oil
2 tablespoons pumpkin seeds
Dash of lemon juice

Peel the parsnip and cut it into large pieces. Pulse in a food processor until it has a texture like couscous. Transfer to a bowl. Rinse the arugula and fold it into the parsnip. Fold in pear pieces and pumpkin seeds. Mix with olive oil and lemon juice.
