Raw Fresh Berry Pie

The filling in this pie is just plain berries, a fresh and sweet treat for summer. It’s also quick: From start to finish, you can have this pie on the table in 30 minutes or less.

Serves 4

Crust:
5 cups walnuts
1 tablespoon honey
8 dates
1pound coconut, grated
2 teaspoons cinnamon
Pinch of salt

Filling:
5 cups raspberries and blueberries, fresh or thawed

Cashew cream:
2 cups cashews
1/2 vanilla bean or 1 teaspoon organic vanilla powder
1 pear, cut into pieces
2 cups water
Either: 1 tablespoon honey or agave syrup or 4 dates

Chop walnuts in food processor until finely chopped. Add the coconut and process again. Add honey, fresh dates, cinnamon and salt and process until it forms a doughy consistency. Press the dough into pie plate. Lay the berries over the crust. Serve with cashew cream.

Cashew Cream:
Grind cashews to a powder in a food processor. Add half the water and process again. Add the vanilla, sweetener and pears and process until smooth. Add vanilla, sweetener or water to get the taste and consistency you like.
