This raw apple pie has a smooth apple-banana filling topped with crispy sliced apples. It’s a unique apple pie experience that you’re sure to love.
4 cup almonds
1 tablespoon canola oil or almond oil
A pinch of salt
A pinch nutmeg
2 teaspoons cinnamon
5 fresh dates
1 tablespoon honey
1 teaspoon cinnamon
2-3 apples, sliced
Process the almonds in food processor until finely chopped. Add the oil, dates, spices and salt and process again. Then add honey and process until it forms a doughy consistency. Press the dough into a pie dish.
Place all filling ingredients in a food processor and process until smooth. Spread the filling on the pastry.
Garnish with the sliced apples. Sprinkle with cinnamon to taste. Serve with cashew cream.
For best flavor, use organic vanilla powder. You can also use this cream in “milkshakes” or served over fruit.
2 cups cashews
1 ripe pear
1/2 – 1 cup water
1 teaspoon vanilla powder
Grind cashews to a powder in a food processor. Add pear and about 2 tablespoons water. Process until smooth. Add vanilla and process. You can also add more vanilla if you want more vanilla flavor.
