Sweet potatoes and carrots have a natural sweetness that makes them a good base for pies and cakes. For a variation, add cinnamon or cardamom.
1 red apple, coarsely chopped
1 sweet potato, peeled and coarsely chopped
3 carrots, peeled and coarsely chopped
2 tablespoons coconut oil
Zest of 1 lemon
1 teaspoon vanilla powder
1/2 cup walnuts
20 goji berries
Add apple, sweet potato and carrots to a food processor. Process until they are finely minced. Add lemon zest and vanilla powder. Process again until everything is mixed. Spread in a regular pie plate. Garnish with walnuts and goji berries. Place in the freezer for an hour before serving.
